Vegetarian Cauliflower Tacos

Ingredients

For the cauliflower:

  • 2 heads of cauliflower, cut into florets (about 8 cups florets)

  • 2 tablespoons avocado or olive oil

  • 2 teaspoons chili powder

  • 1 teaspoon paprika

  • 1 teaspoon salt

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • Pinch of cayenne

For serving:

  • Corn tortillas, warmed

  • Guacamole

  • Pickled red onions

  • Reynaldo’s Queso Fresco

  • Fresh cilantro

  • Rice and beans, on the side

Directions

  1. Preheat oven to 420F.

  2. In a small bowl, combine all the spices and set aside.

  3. Add the cauliflower florets to a large bowl, then drizzle with the oil.

  4. Add the spice mixture and toss well to combine.

  5. Arrange the cauliflower evenly on a lined baking sheet, and roast until tender, about 20 minutes.

  6. Once the cauliflower is done, remove it from the oven and let it cool slightly.

  7. To make the tacos, spread a layer of guacamole on the tortilla. Add the cauliflower, then top with the pickled onions, Reynaldo’s Queso Fresco, and cilantro. Enjoy!
