Cheesy Sausage and Peppers with Reynaldo’s Grillers
Ingredients
2 tablespoons olive oil
1 jalapeno, sliced into strips
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 yellow onion, sliced into strips
2 cloves garlic, minced
½ teaspoon cumin
½ teaspoon chili powder
1 teaspoon salt
½ teaspoon black pepper
Queso Asadero or Queso Menonita
Chorizo Grillers
Toasted crusty rolls
Directions
In a large saute pan, heat the olive oil. Add the jalapeno, bell peppers, and onion, sauteeing until soft.
Add the garlic and cook for an additional 30 seconds. Add all the seasonings and stir well to combine.
Meanwhile, cook the grillers in a grill pan until they are fully cooked.
Add one griller to a roll, then top with the pepper and onion mixture.
Top with a handful of the cheese and slide under the broiler to melt. Enjoy!
