Longaniza Skewers

Ingredients

  • 1 pound pork longaniza, sliced into ½‑inch pieces

  • 1 red bell pepper, cut into 1‑inch chunks

  • 1 medium onion, cut into 1‑inch chunks

  • 1 medium zucchini, sliced into ½‑inch rounds

  • 2 tablespoons vegetable oil

  • Salt to taste

  • Skewers (wooden, soaked, or metal)

Directions

  1. Preheat grill to medium‑high heat (≈400°F)

  2. In a bowl, combine longaniza, bell pepper, onion, zucchini, oil, and salt; toss

  3. Thread ingredients onto skewers, alternating meat and vegetables

  4. Grill 4‑5 minutes per side, turning frequently, until longaniza reaches 160°F and vegetables are tender

  5. Remove, let rest 2‑3 minutes, and serve
