Longaniza Skewers
Ingredients
1 pound pork longaniza, sliced into ½‑inch pieces
1 red bell pepper, cut into 1‑inch chunks
1 medium onion, cut into 1‑inch chunks
1 medium zucchini, sliced into ½‑inch rounds
2 tablespoons vegetable oil
Salt to taste
Skewers (wooden, soaked, or metal)
Directions
Preheat grill to medium‑high heat (≈400°F)
In a bowl, combine longaniza, bell pepper, onion, zucchini, oil, and salt; toss
Thread ingredients onto skewers, alternating meat and vegetables
Grill 4‑5 minutes per side, turning frequently, until longaniza reaches 160°F and vegetables are tender
Remove, let rest 2‑3 minutes, and serve
