Chorizo con Papas

Ingredients

  • 2 potatoes, peeled and diced

  • 1 package Reynaldo's Pork Chorizo

  • 2 tablespoons avocado oil

  • 4 eggs

  • Salt and pepper

  • Paprika

  • Garlic powder

Directions

  1. In a large pan, add the avocado oil. Once hot, add the potatoes and sauté until cooked through. Add the seasonings to your preference.

  2. Make a well in the middle of the potatoes and add the Pork Chorizo. Cook for about 10-15 minutes, or until fully cooked.

  3. Make another well and pour in the eggs. Scramble everything together and serve with tortillas, cheese, and other accompaniments.
