Chorizo con Papas
Ingredients
2 potatoes, peeled and diced
1 package Reynaldo's Pork Chorizo
2 tablespoons avocado oil
4 eggs
Salt and pepper
Paprika
Garlic powder
Directions
In a large pan, add the avocado oil. Once hot, add the potatoes and sauté until cooked through. Add the seasonings to your preference.
Make a well in the middle of the potatoes and add the Pork Chorizo. Cook for about 10-15 minutes, or until fully cooked.
Make another well and pour in the eggs. Scramble everything together and serve with tortillas, cheese, and other accompaniments.
